Three Ingredient Habanero Jelly - Easy & Delicious

My dad passed down my grandma's prized and precious habaรฑero jelly recipe to me and my husband (two people who have never canned anything). 

8 c. fruit (we used plums with the pits and stems removed)
3 large habaneros - seeds and stems removed (use more or less to taste; you can also use jalapenos instead)
6 c. sugar

Enough jars, rings, and new lids for 8 pints of jelly plus a few extra - clean and ready to go BEFORE YOU START
2 large pots
Wooden utensil
Canning funnel and metal spoon
Canning tongs

Step 1. Blend. Blend the 8 c. of fruit and 3 large habaneros. Only add enough water to help it blend easily.

Step 2. Add sugar. Put the blended fruit and habanero mixture into a large pot. Add 6 c. of sugar.

Step 3. Stir. Stir until there are no clumps of sugar. Then turn the heat to 6 or 7. Bring the liquid to boiling. Continually stir and check until you get a half-inch hanger off of a wooden utensil. DO NOT STOP STIRRING. Do not stir too short or too long. Take turns stirring for best results.

Step 4. Can. Put a canning funnel with a spoon in the middle into a canning jar. Carefully fill the jars with your jelly mixture. Leave at least a one-inch gap from the top of the jar. Put the lids and rings on but don't over-tighten; air needs to be able to escape from the jars in order to properly seal and preserve them.

Step 5. Hot water bath. Put as many jars as you can fit into the bottom of a large pot. Fill with enough water to cover the jars with 2-3 inches of water. Bring to a boil, then time for 15 minutes. Carefully move the jars to a towel on the counter or table using canning tongs.

Step 6. Enjoy! You can start eating your jelly right away! Store the rest on a shelf in your pantry to enjoy for many months. We like eating in on crackers with cream cheese. Tell me in the comments how YOU plan to enjoy your jelly.

  2. In your ingredients you say 8 cups of fruit but in your process steps you say 6 cups of fruit. Can you please tell me which one it is? 6 or 8 cups of fruit? This sounds delicious.
